Ingredients

- 1/2 cup crunchy peanut butter
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 2 tsp honey
- 1 tsp fresh lime juice
- 2 tbsp water
- 1 clove garlic, minced
- 1 tsp finely grated ginger
- crushed red pepper, to taste
- 1/2 tbsp sesame seeds
- 1 large cucumber
- 2 tbsp cilantro
Instructions
- In a small bowl, mix together peanut butter, vinegar, soy sauce, sesame oil, honey, lime juice, and water. Give it a stick stir with a fork and microwave for 30 seconds to loosen the sauce up. Stir in garlic, ginger, red pepper flakes, and sesame seeds. Set aside
- Use the a vegetable peeler or Brieftons vegetable spiralizer to make noodles out of a cucumber.
- Drizzle the peanut sauce on top of the noodles and garnish with chopped cilantro and additional sesame seeds. Enjoy!
