- 7 tbsp softened unsalted butter
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp cardamom powder
- 1/4 tsp ground ginger
- 1/2 tsp cinnamon
- pinch of nutmeg
- 1/4 tsp salt
- 1 cup white chocolate chips
- cookie butter
Instructions
- Pre-heat oven to 350 F and place cookie butter in freezer.
- Cream butter and sugars together until light and fluffy.
- Scrape down the bowl and add the egg and vanilla. Mix until well incorporated.
- In a separate bowl, sift flour, baking soda, spices and salt together. Add this mixture to the wet ingredients and mix until you have a nice dough. Try and roll a piece of the dough into a ball, if it’s too sticky, add 1 tbsp of flour to the mixture and mix and try again. Keep adding 1 tbsp of flour at a time until you can roll some dough without it sticking to your hands.
- Mix in the white chocolate chips.
- Take 1 tbsp of dough and flatten it out. Add 1 tsp of cookie butter into the center and pull the cookie dough to surround it and pinch it closed . Roll it into a ball and place on a ungreased baking sheet.
- Bake for 9-11 minutes or until slightly olden brown. Cool on a rack and enjoy!
