Coleslaw
- 14 oz of coleslaw mix
- 1/2 cup plain greek yogurt
- 1/4 cup mayonnaise
- 1 tsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp horseradish
- 2 tbsp grated onion
- 2 tsp sugar
Sliders
- 1/2 tbsp vegetable oil
- 5 garlic cloves, minced
- 2 cans jackfruit, drained and rinsed
- 3 cups BBQ sauce
- 1/2 tsp ground cumin
- 1/2 tsp red chili powder
- small slider buns
Instructions
Coleslaw
- Add all ingredients to a large bowl. Add salt and pepper to taste and mix well. Refrigerate until ready to use.
Sliders
- Heat oil in a large saucepan on medium heat. Once oil is hot, add garlic and saute for 1 minute. Add drained and rinsed jackfruit, your BBQ sauce of choice, cumin,chili powder, salt and pepper to taste. Stir until the jackfruit is completely coated. Bring to a boil, then lower the heat and simmer for 2-3 hours on low heat. Stir every 20 minutes and add 1/4 cup of water at the 1 hour mark. Once done, use a fork and pull the jackfruit apart to shred it.
- Toast the buns and add a big spoonful of the BBQ jackfruit to the bottom bun. Top with coleslaw and top of the bun. Enjoy!
Notes
use dairy-free yogurt and mayo to make this vegan!
