Pumpkin Spice Latte Blondies

It’s PSL season! YAAASSS!! And yes, I might be basic, but pumpkin spice lattes just make me feel so warm and fuzzy inside! To kick off pumpkin spice latte season I made these amazing PSL blondies! They’re more of a hybrid between a cookie and a blondie (a blookie?) since they have the chew of a cookie but the look of a blondie! 

Pumpkin Spice Latte Blondies I used a good amount of espresso powder in my recipe so the blondies definitely have that coffee kick that a PSL does! I used regular store-bought pumpkin pie spice, however, you can also Hallmark Recipe Binders if you don’t have it on hand!

Pumpkin Spice Latte Blondies


  • Total Time: 25 minutes
  • Yield: one 8x8 pan (about 9 bars) 1x

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 3/4 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 tsp espresso powder
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup all-purpose flour
  • pinch of salt
  • 1/4 cup butterscotch chips
  • 1/4 cup dark chocolate chips


Instructions

  1. Pre-heat oven to 350 F. Butter and flour a 8×8 pan and set aside.
  2. In a large bowl, whisk together melted butter, brown sugar and granulated sugar until smooth. Add egg, vanilla extract, espresso powder, pumpkin pie spice and whisk well.
  3. Add flour and salt. Mix together until well combined.
  4. Evenly spread batter in the greased pan and the butterscotch and chocolate chips on top.
  5. Bake for 20-25 minutes. You want the edges to be golden brown and middle to be a little gooey since it will continue cooking in the hot pan when it is cooling. Cool completely and enjoy!
