Acai Cardamom Shrikhand Fruit Bowls | Milk and Cardamom

Shrikhand always takes me back to my childhood. I have so many memories of sticking my finger into a bowl of thick, delicious yogurt and licking it off my finger! Shrikhand is an Indian dessert, mostly found in the Western states of India, made of hung curd (aka yogurt). It’s typically flavored with saffron and cardamom. Sometimes rose-water or mango purée is added to it to make it extra special. Hung curd is a thick yogurt where all the water has been drained off. My yogurt ended up being so thick I could actually stick my spoon in it without it falling over!

The thickness and consistency really reminded me of Ellenos yogurt from Pike Place! Ellenos typically puts fruit in their yogurt so I figured it would work with hung yogurt!  I add acai purée to my shrikhand so that I could make a yogurt fruit bowl with it for breakfast! I topped mine with blood oranges and toasted pumpkin seeds, but feel free to use whatever fruits and nuts you have.

It’s a great make-ahead meal as well. Just make a big batch of hung yogurt and spoon it into your meal prep containers. Top with fruit on the day of and enjoy!

Acai Shrikhand Fruit Bowls


  • Total Time: 10 minutes
  • Yield: 2-4 servings 1x

Ingredients

Scale
  • 24 oz plain yogurt
  • 23 tbsp honey (or your choice of sweetener) to taste
  • 1/2 tbsp freshly ground cardamom
  • 1/4 cup acai puree
  • fresh fruit and nuts for toppings


Instructions

  1. Place a strainer over a bowl. Cover the strainer with 3 layers of cheesecloth. Pour plain yogurt into the cheesecloth.
  2. Pull up all the corners of the cheesecloth and twist it tight
  3. Place a plate on top and a heavy jar or can. Refrigerate for 4 hours or overnight.
  4. Remove the yogurt from the cheesecloth and place it into a medium-sized bowl. Whisk in your choice of sweetener, acai puree, and cardamom. Add additional sweetener if needed. Cover in plastic wrap and 20 minutes or overnight.
  5. Spoon 1 cup of yogurt into a bowl and top with your choice of fruit, nuts or granola! Enjoy!

Notes

you can replace the acai puree with any kind of fruit puree!
