Palm Sugar/Jaggery Latte


Description

A warm milky latte sweetened with a palm sugar/jaggery syrup.


Ingredients

PALM SUGAR/JAGGERY SYRUP

  • 1/4 cup water
  • 1/4 cup palm sugar/ jaggery

LATTE

  • 1 cup milk
  • 1/4 cup of strong brewed tea or coffee OR 1 shot of espresso


Instructions

Palm Sugar/ Jaggery Syrup

  1. Add water and palm sugar/jaggery into a small pan and stir until all the sugar has dissolved. Bring to a boil and simmer for 3 minutes. Pour into a cup with a spout and set aside.

Latte

  1. Add milk to a saucepan over medium-low heat. Use a spiral whisk (or frother) to whisk the milk using a side to side motion to froth it up. Keep whisking un the milk starts to steam.
  2. Use a spoon to skim off the foam and place it into a small container.
  3. Pour palm sugar/jaggery syrup (to your taste) into the bottom of 2 cups (about 1 tbsp each). Add your tea, coffee or espresso. Pour the steamed milk into each cup and top off with dollops of the foam you skimmed off earlier.
