Apple Spice Pecan Fingers


Description

Nutty pecan fingers rolled in an apple powdered sugar. Makes 12 cookies

APPLE POWDERED SUGAR

  • 1/4 cup (10 g) freeze dried apples
  • 1/4 cup powdered sugar
  • edible glitter or powdered food dye (optional)


Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper or a silicone mat.
  2. In a small bowl, whisk together 1 1/4 cup (156 g) of all-purpose flour, 1/2 tsp ground cinnamon, 1/2 tsp ground cardamomand 1/4 tsp salt.
  3. In a separate bowl, add 1/2 cup (113 g) unsalted butter and 1/3 cup (40 g) powdered sugar and cream for 2-3 minutes, mixing on medium speed. Add 1 cup ( 105 g) pecans, chopped. Add 1/2 tsp vanilla extract and 2 tsp milk and mix for 30 seconds. Add dry ingredients and mix until well combined. The dough will be soft but it shouldn’t stick to your hands.
  4. Roll 1 1/2 tbsp of dough into a 3-inch log and place it on the prepared baking sheet. Repeat with the rest of the dough, placing each cookie log 2 inches apart.
  5. Bake for 20-25 minutes or until the bottom of the cookies starts turning golden brown. Cool for 10 minutes on the baking tray and then cool completely on a rack.
  6. While the cookies are cooling, add 1/4 cup (10 g) freeze-dried apples and 1/4 cup powdered sugar to a blender and blend until fine. Feel free to add edible glitter or powdered food dye to your powdered sugar. I added some pink edible glitter to mine! Sift the apple powdered sugar into a bowl.
  7. Roll the cooled cookies in the powdered sugar and enjoy!
