Description
Cozy chewy blondies made with cookie butter, chocolate and pecans! Makes one 9×9 inch pan of blondies.

- 6 tbsp (85 g) unsalted butter
- 3 tbsp (45 g ) Biscoff cookie butter
- 3 tbsp (30 g ) white chocolate
- 1 egg (or 1/4 cup apple sauce)
- 1/2 cup (107 g) granulated sugar
- 1/2 tsp vanilla extract
- 3/4 tsp cinnamon
- 1/2 tsp salt
- 1 1/4 cup (152 g) all purpose flour
- 1/2 cup pecans, chopped
- 1/2 cup semisweet chocolate chips
- 3 Biscoff Biscuits,broken into pieces
Instructions
- Preheat oven to 350°F. Grease and line a 9×9 baking pan with parchment paper.
- Add butter to a saucepan and melt over medium heat. Remove from heat and stir in cookie butter and white chocolate and stir until melted. Set aside.
- In a medium bowl, whisk together egg, sugar, vanilla, cinnamon and salt until well combined. Slowly whisk while pouring in the melted butter mixture and whisk for 1 minute. Fold in the flour and once most of the flour has been incorporated add the pecans and chocolate chips and mix until well combined.
- Spread the batter out onto the prepared pan in an even layer. Sprinkle the top with additional pecans, chocolate chips and broken pieces of Biscoff cookies. Bake the blondies for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out with a few crumbs. Cool, cut and enjoy!
