Brunost Chocolate Chip Cookies

Makes 2 dozen Brunost Chocolate Chip Cookies


Ingredients

  • 2/3 cup (150g) unsalted butter, room temperature
  • 2/3 cup (138g) dark brown sugar, packed
  • 2/3 cup (138 g) granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg ( or 1/4 cup applesauce)
  • 2 tsp vanilla extract
  • 1 3/4 cup plus 2 tbsp (236 g) all purpose flour
  • 1/3 cup (63 g) semisweet chocolate chips
  • 1/3 cup (63 g) milk chocolate chips
  • 100 g brunost, 1/4 inch dice
  • flake salt (optional)


Instructions

  1. In a mixing bowl, add unsalted butter, dark brown sugar, and granulated sugar. Mix on high speed for 3 minutes. Add egg (1/4 cup of applesauce if you’re doing it eggless), vanilla extract, baking powder, baking soda, and salt.  Mix on high for 1 minute. Add in all-purpose flour and mix on low speed until half the flour has been incorporated. Add in the diced brunost and chocolate chips, leaving some brunost and chocolate chips behind to place on top of the cookies later on. Continue mixing on low speed until all the flour has been incorporated. Cover the bowl with plastic wrap and chill the dough in the fridge for at least 1 hour.
  2. Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone mat.
  3. Roll 2 tablespoon-sized scoops of dough (41 g each) into 24 balls. Place on the parchment-lined baking sheet 3 inches apart. Top each dough ball with additional chocolate chips. Bake for 12-14 minutes. Sprinkle with flaky salt. Let the cookies cool on the cookie sheet until completely cool.
