Easiest Berry Cobbler Ever!

When I usually think of American comfort food, I think of the deep south. However, after reading Victuals by Ronni Lundy, I’ve learned that it’s so much more than just the south! The cookbook has a collection of stories and recipes that stem from Appalachian mountain families from southern Ohio all the way down to Georgia. Dishes like buttermilk brown sugar pie, apple butter, buttermilk and nutmeg cookies, and sorghum butter piqued my interest. But the one that really popped out to me was the Busy Day Cobbler. An easy and “quick-ish” dessert that you can whip together with whatever fruit you have in your fridge and a few pantry ingredients.

I changed the recipe from the book a bit and used some raspberries from my local farmer’s market and frozen blueberries for my filling. Let me tell you – the crust/edges on this cobbler are AMAZING! The butter just crisps and caramelizes them, giving them a crunchy sweetness that’s so good with the soft berries. I topped my cobbler with Three Twins Dad’s Cardamom ice cream, however, the author likes to top hers with a shot of buttermilk.  The cardamom ice cream really made it a delicious fall dessert!

Victuals means food or provisions, and that’s how the author, Ronni Lundy, describes food from the Appalachian region of the United States. It’s pretty rare that I actually read the stories that go along with recipes when I get a cookbook, but I actually really enjoyed it and found myself reading it more like a novel. I loved reading about the origin of the foods and how the food played a role in the author’s life growing up in Appalachia in Kentucky. A lot of the meat recipes have German and Irish roots (colcannon, pork chops,e tc), showing how immigrants shaped Appalachian comfort food. I’m a huge history buff, so I really liked this aspect of the book. Also, the photography is absolutely beautiful , it was one of the main reasons why I even decided to review this cookbook!

As for the cobbler, it lived up to my expectations. The cookbook is super easy to follow and the end product pretty much matched the book’s picture.

Easiest Berry Cobbler Ever!


  • Total Time: 35 minutes
  • Yield: one 8x8 pan 1x

Ingredients

Berry Filling

  • 1 cup raspberries
  • 1 cup frozen blueberries
  • 2 tbsp granulated sugar
  • 1 tsp lemon zest
  • 1 tsp fresh lemon juice
  • 1/4 tsp salt

Cobbler

  • 1/2 cup milk
  • 1 tbsp lemon juice
  • 3 tbsp unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup all purpose flour
  • 1 1/4 tsp baking powder


Instructions

Berry Filling

  1. Toss berries with sugar, lemon zest, lemon juice and salt. Set aside.

Cobbler

  1. Pre-heat oven to 375 F.
  2. In a small bowl, mix milk and lemon juice together and set aside.
  3. Place butter in a 8×8 pan and put in the pre-heating oven to melt it.
  4. In a medium bowl, whisk together sugar, flour, and baking powder. Add the milk mixture and whisk together quickly.
  5. Remove the 8×8 pan from the oven and swirl the melted butter around to coat the sides and bottom. Pour most of the butter into the batter and whisk together until incorporated. Pour the batter into the butter 8×8 pan and spread evenly. Spoon the berries evenly on top of the batter, leaving a 1/2 inch edge around the sides.
  6. Bake for 30 minutes. Let the cobbler cool slightly and serve with ice cream or a shot of buttermilk.

Notes

Personalize this recipe by substituting the berries for 2 cups of any fruit you like
