Fresh Figs with Ice Cream

Fresh Figs with Vanilla Ice Cream drizzed w/ Honey

I have a confession. I love figs. Even as a kid I enjoyed getting Fig Newtons in my school lunch box while most kids would frown and try to trade them for chocolate chip cookies. I love to gnaw on dried figs as snacks, and recently my mom picked up a few fresh figs from a local farmers market. After eating a few I noticed that they weren’t nearly as sweet as I thought they would be.To fix that I added some low fat vanilla ice cream with honey drizzled on top to the figs. It was refreshing treat, even my little 6 years old cousin enjoyed it ( who isn’t a fan of figs usually)! I have converted yet another.
