Greek Salad

For the past 2 weeks I’ve been on a healthy diet for my wedding in two month. Indian dresses don’t give you too much coverage—-so I thought it might be time to get serious about getting fit. A co-worker of mine makes  the BEST Greek salad I have ever had, and I hate salads….a lot. It’s crunchy, tangy, briny, and straight delicious. This is a great salad to make the night before, especially for lunch, since nothing gets soggy and all the flavors marinate together.  Here is the salad recipe that has won me over:

2 small Persian cucumbers, diced

1 medium tomato, diced

olives, to your taste

1/4 cup of pickled onions (recipe to be added soon), OR 1/4 cup of chopped onions

1/4 cup of feta, or more if you like

juice from 1/2 a lemon

1/2 tablespoon of olive oil

salt and pepper to taste

1. Add everything to a large Tupperware bowl. Put the lid on and shake,shake,shake. Once everything is incorporated. Enjoy!
