This week my two best friends, Kartik and Chandni, got engaged. Kartik had asked me to make some cookies for a surprise picnic he planned and I immediately thought of funfetti cookies. They are literally the most colorful and charismatic couple I know and this cookie embodies them. Funfetti cookies are the ideal celebration cookie- so I baked up a batch. Most recipes called for cake flour; however, I did not have any, so I made an easy substitute with cornstarch and all-purpose flour.
Cook time: 45 min Makes: 4 dozen cookies
10 tbsp unsalted butter, softened
2/3 cup granulated sugar
1/2 cup light brown sugar
1 egg
1.5 tsp vanilla extract
1/4 tsp salt
3/4 tsp baking powder
1/2 tsp baking soda
1 cup minus 2 tbsp all-purpose flour
2 tbsp cornstarch
3/4 cup bread flour
1.5 cup chocolate chips
1/4 cup rainbow sprinkles
1. Pre-heat the oven to 350 F
2. Cream the butter and sugar together until nice and fluffy. Then add the egg and vanilla extract and mix together for about 2 minutes on med-high speed.
3. In a separate bowl, add 1 cup of all-purpose flour and remove 2 tbsp of the flour. Replace the flour you took out with 2 tbsp of cornstarch. Now sift this mixture at least 5 times! This is now your cake flour substitute! Add the bread flour, salt, baking soda, and baking powder to the bowl and mix well.
4. Add the flour mixture to the butter mixture in 3 batches, mixing in between additions until incorporated. Fold in the sprinkles and chocolate chips. Freeze the batter for 30 minutes.
5. Once the batter is nice and firm, scoop out the dough with a cookie scoop or spoon and place them on a non-greased cookie sheet about 1-2 inches apart. Bake for 9-12 minutes or until the edges just start turning brown. Remove from the oven and then let them rest on the sheet for 2 minutes before placing them on rack to cool.
