I’ve been on the lookout for healthy, quick meal ideas more and more lately. With the baby, I keep finding myself eating a buttload of Trader Joe’s frozen meals, which are delicious but let’s be real, they aren’t exactly healthy. My cousin’s wedding is coming up and I have a few belly baring Indian outfits to wear so I’m ready to shed these last few pounds of baby weight!
Diets don’t really do it for me since I want something a bit more practical and well…I love carbs. Instead, I just use portion control and decrease the amount of carbs I eat slightly to a reasonable amount.
One of my new go to’s is this mediterranean pita pocket. It is stuffed with veggies, greek yogurt, and Hilary’s Mediterranean Bites. I found some Hilary’s products in the freezer section at my local Whole Foods and gave it a try and fell in love! They are packed with leafy greens and protein-rich garbanzo beans with no preservatives!
I basically made a falafel and substituted the falafel balls with the Mediterranean Bites. Just crisp them up on a skillet, chop up some veggies and you have a super filling meal that you don’t have to feel guilty about!
This 15-minute meal has been a huge help and has become a weekly go to for me. Give it a try!

- Total Time: 20 minutes
- Yield: 2-3 pita pockets 1x
Ingredients
- 1/2 cup cucumber, chopped
- 1 tomato, diced
- 1/4 cup red onion, diced
- 1/2 tbsp dill, chopped
- 1/2 tbsp parsley, chopped
- 1/2 tbsp fresh lemon juice
- 2 garlic cloves, minced
- 2 tsp vegetable oil
- 8 Hilary’s Mediterranean Bites
- 1 cup Romaine lettuce, chopped
- plain greek yogurt
- 2–3 whole pita pockets
- hot sauce (optional)
Instructions
- In a small bowl combine chopped cucumber, tomato, onion, dill, parsley, lemon juice, garlic, salt and pepper to taste. Set aside.
- In a small non-stick skillet heat vegetable oil on high heat. Once oil is hot add Hilary’s Mediterranean Bites and cook 3 minutes on each side on medium-high heat.
- Heat up pita pockets in toaster until warm. Cut off the top and stuff it inside the pita to line the bottom. Add the cucumber salad, chopped lettuce, a few Mediterranean Bites and top with plain greek yogurt and/or hot sauce. Serve while warm!
