Icelandic Spice Cake

Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp unsweetened cocoa powder
  • 1 tsp ground cardamom
  • 1 tsp ground cloves
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 1/2 cups milk


Instructions

  1. Pre-heat oven to 350 F. Grease a 9×5 loaf pan with butter and set aside.
  2. Cream butter and sugar together in a large mixing bowl. I set mine to medium speed and let is mix for 3 minutes until it was white and fluffy.
  3. While the butter is creaming, add flour, cocoa powder, spices, baking soda, baking powder and a pinch of salt to a mixing bowl and whisk together.
  4. Add the eggs and vanilla extract to the butter and beat for 1 minute.
  5. Add the flour mixture to the wet ingredients in 3 increments, mixing well in between each batch.
  6. Set the mixer on low speed and slowly drizzle in the milk. Scrap down the bowl and mix until you have a smooth, homogenous batter.
  7. Pour the batter into the grease loaf pan and smooth it out with a spatula. Bake for 75 – 90 minutes or until a toothpick comes out clean from the center! Cool the cake and serve with coffee or tea!
