For a really long time, I hated granola. I just likened it to bland, dry, wood chips. I honestly think it’s because I’ve only ever had store-bought granola. It wasn’t until recently that I was introduced to good homemade granola. Perfectly roasted nuts mixed with crunchy seeds and oatmeal that is just slightly sweetened. I could eat the homemade stuff all day!
The lovely part about making granola is that you can make it yours. Add whatever nuts, seeds, grains, spices or dried fruit that your heart desires! It is so versatile! I made this granola mine by using chai spices like cinnamon, cardamom, ginger, cloves, and nutmeg.
If you want to make my recipe yours just use 2 parts oatmeal, 1 part coconut oil and 1 part liquid sweetener (maple syrup, honey, etc). substitute all the nuts for 1 1/2 cups of whatever nut and seeds mix you want! Add more or less of any spice! Like cinnamon? Use a whole teaspoon instead of half! You can also substitute the maple for honey or any other liquid sweetener.
I paired my granola with Clover Organic Cream on Top yogurt, but feel free to enjoy it with milk or on its own!

- Total Time: 45 minutes
- Yield: 1 quart of granola 1x
Ingredients
- 2 1/2 cups rolled oats
- 1/2 cup slivered almonds
- 1/4 cup raw unsalted pumpkin seeds
- 1/4 cup raw unsalted pistachios
- 1/2 cup raw unsalted cashews
- 1 tbsp amaranth seeds
- 1 tbsp chia seeds
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/4 tsp ground clove
- pinch of nutmeg
- 1/4 tsp salt
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Instructions
- Pre-heat oven to 325 F. Line a baking sheet with parchment paper
- Add all the ingredients to a large bowl and mix well. Make sure all the oats are moist.
- Spread the granola mixture onto the parchment-lined baking sheet into an even layer. Bake for 10 minutes. Gently stir the granola and turn the oven down to 300 F. Bake for 30 minutes, stirring once in between. Remove from the oven and let it cool completely. Store in an airtight container for up to one month. Enjoy with yogurt, milk and on it’s own!
