Indian Style Çilbir (Poached Eggs in Garlic Sesame Yogurt)

  • Total Time: 10 minutes
  • Yield: 1-2 servings 1x

Ingredients

Scale
  • 1 cup plain Greek Yogurt
  • 1 1/2 tbsp vegetable oil
  • 1/2 tsp mustard seeds
  • 1/2 tbsp sesame seeds
  • 12 garlic cloves, sliced thinly
  • 1/4 tsp red chili powder (or to taste)
  • pinch of turmeric
  • 1 egg
  • salt & pepper to taste

Instructions

  1. Bring a saucepan of water to a boil.
  2. While the water is heating, add yogurt to a small bowl. Then in a small saucepan, add oil and heat over medium heat. Add mustard seeds. Once the mustard seeds start to sputter and pop, add sesame seeds and turn the heat down to low. Saute for 30 seconds. Add garlic and mix well. Cook until garlic starts to turn a toasty brown. Add red chili powder and turmeric and quickly mix. Pour the hot oil over the yogurt.
  3. Once the water is boiling, turn the heat down to low. Crack an egg into a small bowl. Lower the bowl into the hot water and gently tip the egg out of the bowl. Use a spoon to swirl the water in a circle. Cook for 2 minutes. Then use a slotted spoon to scoop the egg out of the water and gently place the egg on top of the yogurt. Season with salt and pepper. Enjoy with your bread of choice!

Notes

You can use Greek Yogurt or regular yogurt, only difference will be the consistency of the final dish. Greek yogurt will be thicker while the regular yogurt will be a bit more runny.
