It’s been a while. I’ve been working on my book! I finally submitted my manuscript a week-ago! I can’t believe I’m going to have a cookbook out! WHAT?!! Now that all the hard work is over ( all the recipe developing and testing) I’ll have some more time to get back into posting recipes here. I’ll start off this week with a cinnamon and cardamom-spiced apple crisp.

In my opinion, cardamom and cinnamon define autumn. These two mixed together create the feeling of being on a comfy couch with a warm blanket and a fire going. Apple crisps or apple crumble are super easy to make and require very little effort. It’s a well-known fall dessert in Canada and in the United States that is made with chopped apples tossed with sugar and cinnamon and topped with a brown sugar streusel.

I paired the apple crisp with my new obsession, Humphry Slocombe’s Tahitian Vanilla ice cream! I love that warm and cold feeling. I want my brownies, pies, and cookies all à la mode! If you’re feeling adventurous, give their new Coconut & Shoyu Caramel ice cream a try on top! It’s salty and sweet that pairs with pretty much everything fall-flavored.

Cardamom pairs so perfectly with the cinnamon and apples in this autumn dessert. I devoured the apple crisp in half the time it took to make it. #noshame.  It made my entire kitchen smells like apple pie. It’s quick, easy, and it takes only a few minutes to put together, what’s not to like?

Easy Apple Crisp


Description

A simple apple crisp recipe perfect for the fall season! This recipe can be made in one 8×8-inch pan or three 6-inch round ramekins.


Ingredients

Units Scale
  • 2 apple (340 g), 1/4 inch diced
  • 2 tbsp (24 g) granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 3 tbsp (30 mL) apple cider or water
  • 1/4 cup (55 g) brown sugar
  • 1/4 cup (31 g) all-purpose flour
  • 1/4 cup (39 g) rolled oats
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 3 tbsp (28 g) chopped walnuts
  • pinch salt
  • 1/4 cup (59 mL) unsalted butter, melted


Instructions

  1. Pre-heat oven to 350°F/177°C.
  2. Toss diced apples, sugar, ground cinnamon and ground cardamom in a small bowl. Pour the apples into an 8×8 baking pan or divide the apples into three ramekins. Spread the apples out into an even layer. Pour the apple cider evenly over the apples.
  3. In a separate bowl, add brown sugar, all-purpose flour, rolled oats, baking powder, baking soda, chopped walnuts and a pinch of salt. Mix well and add melted butter. Mix until well combined. Top the apples with pieces of the streusel mixture. Bake for 20-30 minutes or until the crisp topping has browned. Cool for 10 minutes and then serve with a scoop of ice cream!
