Being vegetarian, mashed potatoes is usually the only thing I can eat at more Thanksgiving dinners. Not that I’m complaining, I love me some mashed potatoes. Creamy, smooth and buttery! My mashed potato recipe  These mashed potatoes are actually inspired by Irish champ potatoes, their famous scallion, and mashed potatoes!

The best potatoes to use for mashed potatoes are high starch potatoes like Yukon Gold or Russet potatoes! The best way to get fluffy mashed potatoes that are gummy is to use a potato ricer. It gives you a super smooth mashed potato that’s still light and airy.

Creamy Garlic Scallion Mashed Potatoes


Description

Creamy mashed potatoes flavored with garlic and scallions! So fluffy and creamy, it just melts in your mouth!


Ingredients

Units Scale
  • 3 large Russet potatoes (3 lbs)
  • 9 tbsp (189 g) unsalted butter
  • 6 garlic cloves, minced
  • 6 scallions (90 g), finely chopped
  • 1/2 cup (118 mL) milk
  • 1/4 cup (59 mL) heavy cream
  • salt and pepper to taste


Instructions

  1. Peel and dice the potatoes into 2-inch size pieces. Place the diced potatoes into a sauce pot. Fill with cold water until the potatoes are covered and salt the water. Cover and bring to a boil over medium-high heat. Simmer on medium-low heat for 20 to 25 minutes or until the potatoes are fork tender.
  2. Drain the potatoes and then push them through a ricer into a bowl. If you don’t have a potato ricer, then use a fork or potato masher to mash the potatoes until smooth.
  3. In a large saucepan, add 4 tablespoons (57 g) of butter and melt over medium heat. Once the butter has melted, add garlic and scallions. Saute for 3 minutes. Add mashed potatoes, milk, and heavy cream and mix well. Cook for 3 minutes while continuously mixing. Season with salt and pepper to taste. Spoon into your serving bowl and dot with the rest of the butter. Top with additional chopped scallions or chives.
