Sugar Free Date and Pecan Brownies

It’s January and everyone is trying to eat a little healthier, even me!  I decided to try my hand at some sugar-free eggless baking with these brownies. They’re sweetened with dates and I used yogurt and Once Upon a Farm apple and kale purée as a good egg substitute! These sugar-free date and pecan brownies have an amazing cakey texture and the pieces of pecans and chocolate just make these brownies SO.DAMN.GOOD!

Sugar Free Date and Pecan Brownies


Description

Moist fluffy brownies made with dates, yogurt, and applesauce instead of sugar or eggs! Each brownie comes out to be around 134 calories each! Makes 16


Ingredients

Units Scale
  • 12 Medjool dates (125 g)
  • 3/4 cup plus 1 tbsp (100 g) all purpose flour
  • 3 1/2 tbsp (25 g) coconut flour or unsweetened finely shredded coconut
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup (63 g) unsalted butter, melted
  • 5 tbsp (63 g) plan Greek yogurt
  • 3 tbsp of unsweetened cocoa powder mixed with in 4 tbsp hot water
  • 6 tbsp unsweetened coconut milk
  • 1/4 cup applesauce or Once Upon a Farm Green Kale and Apples puree
  • 1/2 cup (50 g) roasted pecans, chopped
  • 2 oz dark chocolate, chopped


Instructions

  1. Pre-heat oven to 325°F. Grease and line an 8×8-inch baking pan.
  2. Soak the Medjool dates in hot water for 10 minutes. Drain and blend into a puree. Set aside.
  3. In a small bowl, whisk together all-purpose flour, coconut flour, baking powder, and salt.
  4. In a separate bowl, whisk together melted butter, yogurt, and date puree until well combined. Then add cocoa mixture, coconut milk and applesauce. Whisk for 30 seconds. Fold in dry ingredients until just combined. Fold in pecans.
  5. Spoon the batter into the prepared baking pan and smooth into an even layer. Sprinkle the top with chopped chocolate. Bake for 20 to 25 minutes and cool for 10 minutes before enjoying!
