I know butter has been a tough one to get for some folks during this quarantine so I wanted to make an olive oil based cookie to help you guys out! I made these olive oil, almond butter, and anise chocolate chip cookies with some olive oil and almond butter that Enzo Olive Oil sent to me for free (just a heads up!). I decided to pair almond butter and star anise together because it’s a fairly common pairing in Italian cookies, like in biscotti! I love star anise, but if you’re not a fan of the licorice-like flavor, feel free to swap it out for cardamom or cinnamon!
The cookie dough for olive oil-based cookies typically are greasy which means they have a hard time holding onto large chocolate chunks and they fall out and all over the place when you’re rolling the dough into balls. To avoid this I finely chopped my chocolate and then topped each dough ball with large pieces of chocolate to create little pools of chocolatey goodness after they’re baked.
I also used Once Upon a Farm applesauce to substitute eggs in this recipe. However, if you can’t get your hands on applesauce (which I highly recommend keeping in your pantry!) you can use mashed bananas, yogurt, or any other fruit puree.
Dark chocolate and star anise work together so freaking well, these cookies are AMAZING with a cup of hot coffee in the mornings (because who doesn’t love having cookies for breakfast everyone in a while? Treat your self! )

Easy chocolate chip cookies made with olive oil and almond butter and spiced with anise. Makes one dozen cookies
Ingredients
- 3/4 cup (95 g) all purpose flour
- 1/4 tsp baking soda
- 1/8 tsp baking powder
- 1/4 tsp ground star anise
- pinch of salt
- 65 g dark chocolate, fine chopped
- 4 tbsp (50 g) olive oil
- 2 1/2 tbsp (40 g) unsweetened almond butter
- 1/4 cup (55 g) dark brown sugar, packed
- 1/4 cup (50 g) granulated sugar
- 1/2 tbsp date syrup, maple syrup or honey
- 1/2 tsp vanilla extract
- 2 tbsp applesauce ( or 1 egg yolk)
- 10 g dark chocolate, whole chocolate chips or coarsely chopped bar
- flaky sea salt
Instructions
- In a mixing bowl, whisk together flour, baking soda, baking powder, ground star anise, finely chopped dark chocolate, and salt.
- In a separate bowl, whisk together olive oil, almond butter, brown sugar, granulated sugar, date syrup, vanilla, and apple sauce (or egg yolk) until well combined. Add dry ingredients and mix until well combined into a smooth cookie dough. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
- Pre-heat oven to 355°F/180°C and line a baking sheet with parchment paper.
- Roll 2 tbsp worth of dough (33 g) into a ball and place 2-3 inches apart on the parchment-lined baking sheet. Press large coarsely chopped pieces of chocolate onto the top of each cookie. Sprinkle with a pinch of flaky salt onto each cookie dough ball and bake for 9-12 minutes, or until the edges of the cookies start to brown. Cool completely on the baking sheet before enjoying!
