Oatmeal raisin cookies, we love them in our household! Chewy, soft, and the perfect amount of sweetness from California Raisins! Elara and I baked these a few days ago. Since these oatmeal raisin cardamom cookies are surprisingly easy to make they are a great baking activity with young children. These oatmeal raisin cardamom cookies are chewy on the outside and soft in the center- just how I like them, perfect for dunking into a cup of warm chai!

The cookies themselves aren’t too sweet and a lot of that sweetness comes from the California Raisins (which are sweetened by drying out in the sun, concentrating the natural sugars in the grapes). I also added a touch of cardamom and cinnamon to really give it that cozy chai feel.

I like to use baking as a way to teach Elara patience. This recipe requires a little bit of waiting as the cookie dough is quite wet and requires refrigeration overnight. I actually like to make them at night and then bake them off in the morning and have cookies for breakfast as a treat (there’s oatmeal in them, so it’s a breakfast food right?).

Oatmeal Raisin Cardamom Cookies


Description

This oatmeal raisin cookie recipe has a touch of cardamom and is simple to make! Makes 12 large cookies


Ingredients

  • 1 cup (148 g) all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp nutmeg
  • 1 cup (90 g) rolled oats
  • 1/2 cup (113 g) unsalted butter, room temperature
  • 1/4 cup (54 g) granulated sugar
  • 1/4 cup (47 g) brown sugar
  • 1 egg ( or 1/4 cup applesauce)
  • 1 tbsp molasses (optional)
  • 3 tbsp milk
  • 1/2 cup (75 g) California Raisins


Instructions

  1. In a large bowl, whisk together all-purpose flour, salt, baking powder, baking soda, cinnamon, cardamom, nutmeg, and oatmeal until well combined.
  2. In the bowl of an electric mixer fitted with a paddle attachment, combine the butter, granulated sugar, and brown sugar. Mix for 3 minutes on high. Scrape down the sides of the bowl and add egg, molasses, and milk. Mix until combined. Add the dry ingredients and California raisins to the wet ingredients and mix until there are no dry pockets of flour. Cover the bowl with plastic wrap and refrigerate for at least 4 hours.
  3. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  4. Scoop 3 tbsp (56 g) of cookie dough and roll them into balls and place them 3-4 inches apart on the prepared baking sheet. Bake for 15-16 minutes or until the edges are golden. Cool completely on the tray before transferring to an airtight container. Enjoy with a hot cup of chai or on their own!
