Rhut flipped over these cookies, and he is NOT a dessert person. So clearly I had to share this recipe. The secret to these Strawberries & Cream Cookies is the use of imitation vanilla extract! It’s the flavor of our childhood, and most importantly, the flavor of old school vanilla ice cream and birthday cakes! Imitation vanilla extract is what gives these cookies that “cream”-like flavor. These Strawberries & Cream Cookies are also eggless with the use of heavy cream!
To get the maximum amount of strawberry flavor I ground up freeze-dried strawberries. I put some of the powder in the cookie dough itself, and mixed some with powdered sugar to dust on top. Heads up, once you grind up the strawberries, it has a tendency to get tacky and sticky over time, so be sure to add it to the powdered sugar and the flour mixture as soon as you grind it. Powdered sugar will help the strawberry powder from getting sticky as the cornstarch in it will take in any excess moisture. Also, this stuff smells like strawberry ice cream mixed with cotton candy dreams, Elara kept walking around the house yelling YUMMMMMMMMM!
I took a sheet of paper and covered half the cookies and dusted them with the strawberry powdered sugar, but feel free to just dust the powdered sugar on top without using a stencil! Make sure the cookies are only slightly warm, not hot when you dust them. The heat/steam from the cookies will melt the powdered sugar if you add it when the cookies are too hot.
P.S feel free to swap out the freeze-dried strawberries with any other freeze fried fruit like blueberries, mango, raspberries, and more!

Eggless, bright strawberries and cream cookies made with freeze-dried strawberries and a touch of cardamom! Makes 15 cookies
Ingredients
- 1/4 cup (5 g) freeze dried strawberries
- 2 1/2 tbsp (20 g) powdered sugar
- 1cup (125 g) all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp ground cardamom
- 3 1/2 tbsp (47 g) unsalted butter, room temperature
- 1/2 cup (104 g) granulated sugar
- 3 tbsp heavy cream
- 1/2 tsp clear imitation vanilla extract
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Sift powdered sugar into a small bowl and set aside.
- In a small blender or coffee/spice grinder, blend the freeze-dried strawberries until fine. Sift about 1 tbsp of the strawberry powder into the powdered sugar bowl.
- Add the rest of the strawberry powder into a medium mixing bowl along with the flour, baking powder, salt, and cardamom and whisk until well combined. Set aside.
- In a separate bowl, cream the butter and sugar until well combined, about 2-3 minutes. Add heavy cream and imitation vanilla and mix for 1 minute. Add the dry ingredients and mix until well incorporated.
- Roll 1 1/2 tbsp of dough into balls and place the dough balls 2 inches apart on the prepared baking sheet. Bake for 12-14 minutes. Cool on the tray for 10 minutes. Dust each cookie with the strawberry powdered sugar mixture. Feel free to use a stencil to make pretty designs! Store in an airtight container for up to 3-4 days.

These were incredible and so easy to make! Absolutely irresistible and vanished within a day in my household. I made them with freeze-dried blueberries which was an excellent substitute but I’ll be making them again with strawberries next time. Thanks Hetal for this great recipe!
