Do you have avocados on your counter close to going bad? Here is a quick and easy avocado garlic pasta sauces you can throw together quickly for a healthy weeknight meal. I really like this pasta dish warm, but you can totally enjoy avocado garlic pasta cold as well, so it’s perfect for a picnic or quick lunch out of the fridge.
The avocado in this sauce gives this pasta alfredo-type of creaminess without all the fat and calories. Also, if you’re vegan you can substitute the parmesan with nutritional yeast. Avocado garlic sauce is my go-to pasta sauce whenever I’m out of pasta sauce at home and just want something quick and healthy with little fuss and very few dishes to wash. Sometimes I just eat it straight from the pan if I don’t feel like doing dishes. YOLO.
I like to add cherry tomatoes to my pasta for a burst of brightness and tartness to cut through the richness of the avocado garlic sauce. Sun-dried tomatoes would work here too!

Avocado Garlic Pasta

Description
Simple and quick weeknight meal! Pasta with avocado and garlic sauce! Creamy, light and delicious! Makes 2-3 servings
Ingredients
- 1 ripe avocado
- 2 garlic cloves
- 1/4 cup olive oil
- 1 tbsp lemon juice
- 1/4 cup parmesan cheese, grated plus more for topping
- salt and pepper to taste
- 1/4 tsp red chili flakes (or to taste)
- 1/2 lb pasta, uncooked
- 1/2 cup cherry tomatoes, halved
Instructions
- Add avocado, garlic cloves, olive oil, lemon juice, parmesan cheese, salt and pepper to taste, and red chili flakes to a blender and blend until smooth. Taste and adjust seasoning accordingly.
- Bring a pot of salted water to a boil. Add pasta and cook according to directions. Be sure to reserve a cup of pasta water before draining the pasta.
- Add drained pasta into a saucepan over low heat. Add sauce and stir until the pasta is well coated. Add a couple of tablespoons of pasta water to loosen the sauce is needed. Add cherry tomatoes and stir for 1-2 minutes and then serve. Enjoy while warm or cold!
Notes
You can add 1/4 cup of basil to the sauce to make a pesto-inspired sauce! Also, you can freeze any leftover sauce in a Tupperware container for up to 3 months.
