One of my mom’s favorite lazy weeknight meals was a Bombay Sandwich. Bombay sandwiches are not only a popular street food but also a delicious meal! Traditional Bombay sandwiches are filled with boiled potatoes, beets, tomatoes, onion, and a generous spread of green chutney. Growing up mom always used Country Crock® Original since it’s spreadable straight from the fridge and it helps prevent the chutney from making your bread soggy!
To bring this sandwich over to California, I added some avocados, sprouts, and a touch of lemon. The sprouts really give this sandwich a fresh feel since most of the ingredients are cooked like the beets and potato.
The major flavor factor in this Bombay sandwich is the chaat masala. Chaat masala is a mixture of spices like cumin, coriander, dried mango, black salt, and more. It adds a spicy, tangy, salty flavor to this sandwich which is balanced with sweetness from the beets, sourness from the lemon, and richness from the Country Crock® Original.

Bombay meets California! Spicy Bombay sandwich loaded with fresh veggies and spiced with chaat masala. Makes 2 sandwiches
Ingredients
- 4 slices of white bread
- 2–3 tsp of Country Crock® Original
- 1/4 cup green chutney
- 1 avocado, thinly sliced
- Black Pepper , to taste
- 1 boiled potato, thinly sliced
- 1 Roma tomato, thinly sliced
- 1 steamed beet, and thinly sliced
- Chaat masala
- Salt
- 1/2 cup Sprouts
- 1/2 lemon
Instructions
- Spread Country Crock® Original on one side of each slice of bread. Top with green chutney spread evenly.
- Layer avocado slices on half the slices of bread and season with black pepper. Top with boiled potato, tomato, and steamed beets. Season with salt and sprinkle with chaat masala. Add sprouts on top and squeeze a little lemon juice over the sprouts and dust with more chaat masala. Top with the other slices of bread and enjoy!
Notes
You can make this sandwich yours by adding cheese, cucumbers, lettuce, or whatever other veggies you have!
