Avocado Pasta Salad

It’s back to school time and I am NOT ready! Elara is entering kindergarten and that means I actually have to pack her lunches now (her old school provided lunch!). I’m all about packing healthy, quick lunches, so this avocado pasta salad is my go-to. I used Barilla® Ready Pasta, which is a fully cooked pasta, so it took me about 5 minutes to put together! To make it even healthier, you can load it up with whatever veggies you have on hand! Plus, it tastes great warm or cold.

The sauce is made with mashed avocado, olive oil, lemon juice, garlic, salt, and pepper. Feel free to toss in a few tablespoons of parmesan cheese if you like! I like to just blend up the sauce while the Barilla Ready Pasta is cooking in the microwave (it takes just 1 minute)!

Barilla Ready Pasta is made with all-natural ingredients, and it just has a dash of extra virgin olive oil and a pinch of salt. That’s it! I added some ripe cherry tomatoes and fresh English peas to the pasta, however, you can add corn, broccoli, olives, or bell peppers as well.

This is such an easy, delicious lunch for not only your little ones but also you! You could meal prep this lunch as well. Just make the avocado sauce ahead of time and refrigerate it and prep the veggies ahead of time. Cook the pasta in the morning, toss with the sauce, and prepped vegetables. A quick tip: add a bit more sauce than you think because the pasta will absorb the sauce as it sits.
