A few months ago I was at my cousin’s wedding in Florida. One of my cousins has learned a trick using cloves from her Punjabi friends to get her henna/mendhi darker. She added a few cloves to an empty skillet over high heat and roasted them and toasted her hands over the cloves. The entire room ended up being engulfed in this delicious smoky and spicy aroma. I knew right then and there I HAD to figure out a way to get it into a cookie! Cue these smoked clove sugar and orange sable cookies!
I ended up smoking turbinado sugar into a pot with roasted cloves. I didn’t have a smoke gun or any fancy tools so I made it work! Make sure to use a pot with at night fitting lid so the smoke/aroma doesn’t escape! Also, sable cookies are a French cookie that is a type of shortbread!
I added orange zest to my cookies since clove and orange is such a common fall pairing. The tartness of the orange matches really well with the smokiness of hte cloves. I pressed some edible marigold flowers to the top of my cookies, feel free to skip them if you’d like!

Ingredients
SMOKED CLOVE SUGAR
- 1 tbsp cloves
- 1 cup In the Raw Turbinado Sugar
ORANGE SABLE COOKIES
- 1/2 cup (113 g) unsalted butter, room temperature
- 1/2 cup (56 g) powdered sugar
- 1 tbsp orange zest
- 1 egg yolk (or 1 tbsp heavy cream)
- 1/2 tsp vanilla extract
- 1 cup (131 g) all-purpose flour
- 3/4 cup (70 g) almond flour
- 1/4 tsp salt
- 1/8 tsp ground clove
- edible flowers (optional)
Instructions
SMOKED CLOVE SUGAR
- Add 1 tbsp cloves to the bottom of a large pot over high heat. Stir until the cloves are fragrant and turn ashy in color. Turn heat to as low as possible and add a heatproof bowl of 1 cup turbinado sugar into the pan. Place it in the center. Cover for 2-3 hours, turn off and leave overnight to allow the sugar to infuse with the smoke.
ORANGE SABLE COOKIES
- Add 1/2 cup (113 g) unsalted butter, 1/2 cup (56 g) powdered sugar, and 1 tbsp orange zest to a mixing bowl and mix for 2-3 minutes. Add egg yolk and 1/2 tsp vanilla and mix for 1 minute. Sift in 1 cup (131 g) all-purpose flour, 3/4 cup (70 g) almond flour, 1/8 tsp ground clove and 1/4 tsp salt. Mix until well combined. Spoon the dough onto a piece of plastic wrap and roll it into a log that is 1 1/2-inch thick. Freeze for one hour.
- Pre-heat oven to 338°F. Line a baking sheet with parchment paper.
- Pour the smoked clove sugar onto a flat tray or plate and spread into an even layer. Unwrap the frozen cookie dough and roll in the smoked clove sugar until well coated. Slice the log into 1/4 inch thick slices and place onto the prepared baking sheet 1 inch apart. Press edible flower petals onto the cookies if you like. Bake for 10-15 minutes or until the edges just start to brown. Cool on the baking sheet before enjoying it!

I’m really intrigued by this smoking of the sugar. Would you suggest putting foil under the lid to ensure it is well sealed? Also the cloves don’t burn after 2-3 hours?
Hey! Foil will def help seal in that smoke, the cloves won’t burn as long as you keep the flame as low as possible!
