Masala Cheese Fries

Cheese fries take me back to my teenage days, going to my favorite Jersey diners and eating my weight in fries post-dance or football game! I was feeling a bit nostalgic, so I decided to make some with a bit of a desi twist- cheese fries with a masala cheese sauce and sauteed onions. I stepped up the flavor by using Better than Bouillon to flavor some sauteed onions and the cheese sauce. It adds so much flavor to the meal because bouillon is not just for soup! 

The Roasted Garlic and the Sauteed Onion Better than Bouillon bases are both vegetarian-friendly. I like to add them to veggies before roasting them, pasta sauces, rice dishes, or marinades for grilling!

The Roasted Garlic base adds a nice depth of flavor to the cheese sauce and the Sauteed Onion base makes the onions taste like they’ve been caramelized! Just add a small dollop to any recipe and it makes the dish taste like it’s been cooking for hours!

I used frozen fries to cut my cook time but feel free to make your own french fries. I added a little San Francisco feel to them by tossing them in chopped parsley and freshly minced garlic. For the cheese sauce, I added garam masala, cumin powder, and a touch of red chili powder.

Masala Cheese Fries


Description

Ooey gooey cheese fries with a little added spice and sauteed onions! Makes enough for 2 people.


Ingredients

SAUTEED ONIONS

  • 1 tbsp butter
  • 1/2 red onion, sliced and cut in half
  • 1/4 tsp Better than Bouillon Sauteed Onion Base

MASALA CHEESE SAUCE

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1/2 tsp Better than Bouillon Roasted Garlic Base
  • 1/2 tsp garam masala
  • 1/2 tsp ground cumin
  • 1/4 tsp red chili powder, or to taste
  • 3/4 cup milk
  • 1 cup (5 oz) cheddar cheese, freshly grated
  • 8 oz of french fries (cooked)
  • 2 garlic cloves, minced
  • 1 tbsp parsley, finely chopped
  • 1/2 scallion, thinly sliced


Instructions

  1. First, make the sauteed onions. In a small saucepan over medium heat, add butter. Once the butter has melted add onions and the Better than Bouillon Sauteed Onion Base. Season with a pinch of salt and saute for 4 minutes or until the onions have softened. Remove from heat and set aside.
  2. To make the masala cheese sauce, add butter to a pan over medium heat. Once the butter has melted add the flour and Better than Bouillon Roasted Garlic Base. Stir and cook for 1 minute. Add garam masala, ground cumin, and red chili powder and stir for 30 seconds. Add milk and bring to a boil. Simmer for 2 minutes. Turn the heat down to low and stir in the cheese. Once the cheese has melted, remove from heat and cover.
  3. To assemble, toss the cooked french fries with salt, minced garlic, and parsley. Split evenly amongst two bowls and top with the masala cheese sauce and sauteed onions. Sprinkle on some chopped scallion and enjoy!
