Apple Spice Pecan Fingers

Here is a classic favorite recipe with a twist! Pecan fingers are a simple eggless cookie that is buttery and ridiculously easy to make. It’s actually a great cookie to make with little kids if you’re doing a little baking with the family. I added a little cinnamon and cardamom to my pecan fingers and then rolled them in an apple-flavored powdered sugar! Normally pecan fingers are rolled plain powdered sugar but instead, I blitzed some freeze-dried apples with the powdered sugar to add a bright apple flavor to the cookies.

The dough is easy to put together. You can swap out pecans for walnuts or almonds as well if you’re not a fan of pecans. This pecan finger cookie dough is eggless and since it’s made with powdered sugar, the cookies have a nice buttery tender bite to them.

I rolled the cookies into logs but you can also roll the cookie dough into balls (1 tbsp of dough per cookie dough ball) and make 24 cookies instead. If you plan on rolling them into balls, be sure to finely chop your pecans so they are too big.

In my opinion, the apple powdered sugar really makes gives pecan fingers a nice upgrade. I blended freeze-dried apples (not the same as frozen apples!) with powdered sugar. The cornstarch in powdered sugar helps the apple powder from clumping, so be sure to use powdered sugar from the store rather than making your own. I also used some pink edible glitter from Fancy Sprinkles to give the powdered sugar a pink hue (you can use code MILKANDCARDAMOM for 15% off!). Be sure to roll the cookies in the powdered sugar when they are cool otherwise the sugar will melt onto the cookie and clump up.

Apple Spice Pecan Fingers

Nutty pecan fingers rolled in an apple powdered sugar. Makes 12 cookies

APPLE POWDERED SUGAR

  • 1/4 cup (10 g) freeze dried apples
  • 1/4 cup powdered sugar
  • edible glitter or powdered food dye (optional)


Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper or a silicone mat.
  2. In a small bowl, whisk together 1 1/4 cup (156 g) of all-purpose flour, 1/2 tsp ground cinnamon, 1/2 tsp ground cardamomand 1/4 tsp salt.
  3. In a separate bowl, add 1/2 cup (113 g) unsalted butter and 1/3 cup (40 g) powdered sugar and cream for 2-3 minutes, mixing on medium speed. Add 1 cup ( 105 g) pecans, chopped. Add 1/2 tsp vanilla extract and 2 tsp milk and mix for 30 seconds. Add dry ingredients and mix until well combined. The dough will be soft but it shouldn’t stick to your hands.
  4. Roll 1 1/2 tbsp of dough into a 3-inch log and place it on the prepared baking sheet. Repeat with the rest of the dough, placing each cookie log 2 inches apart.
  5. Bake for 20-25 minutes or until the bottom of the cookies starts turning golden brown. Cool for 10 minutes on the baking tray and then cool completely on a rack.
  6. While the cookies are cooling, add 1/4 cup (10 g) freeze-dried apples and 1/4 cup powdered sugar to a blender and blend until fine. Feel free to add edible glitter or powdered food dye to your powdered sugar. I added some pink edible glitter to mine! Sift the apple powdered sugar into a bowl.
  7. Roll the cooled cookies in the powdered sugar and enjoy!
