Homemade Lollipops

During Halloween, Elara will ALWAYS go for the hard candies, especially lollipops! For her birthday this year, she asked that I make her some homemade lollipops! They are surprisingly easy to make and only require a handful of ingredients. I flavored mine with cherry flavoring and glammed them up with some edible glitter!

 

When flavoring your homemade lollipops be sure to use an oil-based flavoring. I like to use LorAnn brand flavorings and used their cherry one this time. I like to add a bit of citric acid to my homemade lollipops so that it has a bit of tartness. I used a lollipop mold for mine but you can also pour the sugar mixture in dollops onto a silicone mat or wax paper once it’s cooled for 5 minutes. Then you can add your lollipop sticks in while the mixture is warm. The lollipops won’t be as circular or thick but they still taste good! 

I also added in some Fancy Sprinkles Prism Powder to make it extra sparkly! You can use code MILKANDCARDAMOM for a small discount! 

I used a brulee torch to make the homemade lollipops extra clear. Now you don’t have to be as extra as me and can totally skip this step. But if you want your homemade lollipops to be crystal clear, just wave a brulee torch across them after they’ve hard for a quick second!

Homemade Lollipops


Ingredients

  • 3/4 cup (180 g) water
  • 1 1/2 cup (300 g) granulated sugar
  • 3/4 cup (260 g) corn syrup
  • 1/4 tsp citric acid powder
  • 12 drops oil-based flavoring (I used LorAnn cherry flavoring)
  • food coloring or edible glitter ( I used Fancy Sprinkles Prism Powder)
  • sprinkles (optional)


Instructions

  1. Place lollipop sticks in the silicone mold and set them aside.
  2. In a small saucepan add 3/4 cup (180 g) water, 1 1/2 cup (300 g) granulated sugar, and 3/4 cup (260 g) corn syrup and bring to a boil over medium-high heat. Stir well. Cook until the mixture reaches 300°F. If you don’t have a thermometer, keep an eye on the mixture, and around 15 minutes, drop a little bit of the mixture into a glass of ice water. If it turns hard, it is done, if it’s soft, try again in 2-3 minutes. Repeat until the sugar mixture hardens when dropped in cold water. Once the mixture hits 300°F remove it from the heat immediately and stir in 1/4 tsp citric acid powder, edible glitter or food color, and oil-based flavoring. 
  3. Pour the mixture into a spouted cup for easier pouring. Pour a small amount of the sugar mixture into each lollipop cavity, Making sure to completely cover the lollipop stick. Decorate with sprinkles if you’d like and then let the lollipops harden (~20 minutes) before removing them from the molds and wrapping them up!
