Small Batch Eggless Spritz Cookies

Here is an easy small-batch recipe for eggless spritz cookies! This simple eggless spritz cookie recipe makes 24 cookies, perfect to send to school with your kids for their class! My OXO cookie press came with a teddy bear and heart mold which were adorable! To substitute the eggs in this spritz cookie recipe, I used a mix of cornstarch and heavy cream. The cookies turn our buttery, light, and delicious! 

I flavored the spritz cookies with vanilla, but you can change it up easily! 

  • Citrus spritz cookies: rub the sugar with 2 tsp of any citrus zest (lemon, lime, orange,etc) and then add butter and make the cookies per the recipe
  • Spices spritz cookies: add in 1/2 tsp of a baking spice like cinnamon, cardamom, chai masala, etc along with the flour
  • Spritz cookie sandwiches: Melt chocolate and spread a thin layer onto a cookie and top with another cookie. Can use thick jam as well!

 

If you don’t have a cookie press, you can use a piping bag fitted with a large star tip and you can pipe swirls, dollops, or lines directly onto a baking pan before baking. Since these cookies are thicker they will take 1-2 minutes extra to bake.

Small Batch Eggless Spritz Cookies

Colorful vanilla eggless spritz cookies. Makes 24 cookies


Ingredients

  • 4 1/2 tbsp (65 g) unsalted butter, room temperature
  • 3 tbsp plus 1 1/2 tsp (43g) granulated sugar
  • 1 tsp (3g) cornstarch
  • 1 tbsp (14g) heavy cream
  • 1/4 tsp vanilla extract
  • 1/8 tsp salt
  • 2/3 cup (83g) all purpose flour
  • gel food coloring (optional)
  • sprinkles (optional)


Instructions

  1. Preheat oven to 350°F.
  2. Add 4 1/2 tbsp (65 g) unsalted butter, 3 tbsp plus 1 1/2 tsp (43g) granulated sugar, and 1 tsp (3g) cornstarch into a mixing bowl and mix for 2 minutes until light and fluffy. Add 1 tbsp (14g) heavy cream, 1/4 tsp vanilla extract, and 1/8 tsp salt, Mix for an additional minute. Fold in 2/3 cup (83g) all-purpose flour until well combined.
  3. At this point, you can fill your cookie press, press out your cookies, and bake. However, if you want colorful cookies, split the dough into 2-3 bowls and color each dough with your choice of food coloring. Fill the cookies press by smearing each color up the sides of the cookies press. Place the cookie press flat on the baking pan and press the cookies directly onto an ungreased baking sheet 2 inches apart.
  4. Freeze the cookies on the tray for 10 minutes before baking for 9-11 minutes on the oven. Remove the tray from the oven and let the cookies cool completely on the tray.
