Earl Grey Sablé Cookies

These eggless sable cookies an easy slice and bake style cookie! Sablé cookies are French shortbread cookies, known for their rich, buttery flavor and crumbly texture, making them a delightful and classic treat enjoy with your warm drinks during the holidays! Typically they are made with eggs, however, I use heavy cream as a egg replacement for this cookie to add the same kind of richness and moisture an egg would! I coated the outside with sprinkles, but you can coat them in sugar, sparkling sugar sprinkles, nuts, or leave them plain.

These cookies are spices with Earl Grey Tea! I just cut open a packet and use it straight from the tea bag! Earl Grey tea is a black tea blend flavored with oil of bergamot, a citrus fruit that really reminds me of mausambi (an Indian sweet lime). The distinctive aroma and flavor of Earl Grey are characterized by the fragrant citrus notes imparted by the bergamot oil.  The flavor kind of reminds me of fruit loops cereal! 

Here are some tips to help you achieve the perfect eggless sable cookies:

Ingredients:

  1. Quality Butter: Since butter is a key ingredient, use high-quality butter for the best flavor. Unsalted butter is preferred so you can control the salt content. I like to use Kerrygold or Plugra butter. 
  2. Flour: Use all-purpose flour for a good balance of tenderness and structure. Also since these cookies are eggless, almost all of the protein that’ll hold the cookies together comes from the flour.
  3. Sugar: Granulated sugar is commonly used in sablé cookie recipes; however, since these cookies are eggless, I used powdered sugar since it’s cut with cornstarch, which helps the cookie hold together. 
  4. Flavorings: Enhance the flavor with vanilla extract, almond extract, or citrus zest. These additions can elevate the taste of your sable cookies. Some fun flavor options outside of my earl grey cookies:
  • Pistachio + Rose water: add 1/4 cup chopped pistachios with the flour and 1/2 tsp rose water to the dough instead of vanilla extract
  • Chocolate Chip: add 1/3 cup chocolate chips with the flour
  • Orange + Cranberry: Add 1 tsp orange zest to the butter and 1/3 cup dried cranberries to the flour

Honestly the possibilities are endless! Get creative with it!

Earl Grey Sablé Cookies


Description

Makes 2 dozen sable cookies.


Ingredients

  • 1/2 cup (113 g) unsalted butter, room temperature
  • 1/2 cup (53 g) powdered sugar
  • 1 tsp earl grey tea
  • 1/4 tsp kosher salt
  • 1 tbsp (15 g) heavy cream
  • 1 tsp vanilla extract
  • 1 3/4 cups plus 2 tsp (215 g) all purpose flour
  • sprinkles (optional)


Instructions

  1. Add butter, powdered sugar, Earl grey and salt to a mixing bowl and mix for 2 minutes, until well combined. Add heavy cream and vanilla and mix for an additional minute. Add flour and mix until the flour is just combined. Split the dough in half and roll each portion into a 6-inch log. Wrap each log in plastic wrap and freeze for 1 hour.
  2. Preheat oven to 325°F and line a baking sheet tray with parchment paper or a silicone mat.
  3. Spread the sprinkles out on a plate. Unwrap the frozen dough and use a damp hand to very lightly dampen the dough so the sprinkles stick to it. Roll the dampened dough over the sprinkles, pressing down quite hard so the sprinkles stick well. Once the log is covered, slice the dough into 1/2-inch thick slices. Repeat with the second log.
  4. Place the cookies on the prepared baking sheet tray about 1 inch apart and bake for 12-14 minutes, or until the edges just start to brown. Cool the cookies on the pan and then cool completely on a rack. They can keep in an airtight container for up to a week!
