I feel like spiralized veggie noodles has been the new trend in food. Zucchini noodles, carrot noodles, and cucumber noodles everywhere. I blame paleo. I hopped on the wagon when Brieftons sent me a veggie spiralizer via Tomoson. It is so much fun to use! It’s super easy to use- put a vegetable in, twist and watch the noodles appear like magic. Cleaning it is a bit tough, even with the little tiny scrubber wand they provide. The cucumber skin got caught in the tiny tight spots and took forever to get out. Was it worth it? Hell yes.

cucumbernoodle (2)I made zucchini noodles for some friends and they were actually really excited about it. I love that it can take a fairly boring vegetable like a zucchini and make it fun to eat. It sounds like a great way to get kids to eat their veggies. I made a quick cucumber salad with a peanut sauce from Two Peas and Their Pod. It’s very refreshing- it’s crunchy, sweet, with a spicy kick to it. Try it for yourself!

Cucumber Noodles with Peanut Sauce


  • Total Time: 10 minutes
  • Yield: 2-3 servings 1x

Ingredients

Scale
  • 1/2 cup crunchy peanut butter
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 tsp sesame oil
  • 2 tsp honey
  • 1 tsp fresh lime juice
  • 2 tbsp water
  • 1 clove garlic, minced
  • 1 tsp finely grated ginger
  • crushed red pepper, to taste
  • 1/2 tbsp sesame seeds
  • 1 large cucumber
  • 2 tbsp cilantro


Instructions

  1. In a small bowl, mix together peanut butter, vinegar, soy sauce, sesame oil, honey, lime juice, and water. Give it a stick stir with a fork and microwave for 30 seconds to loosen the sauce up. Stir in garlic, ginger, red pepper flakes, and sesame seeds. Set aside
  2. Use the a vegetable peeler or Brieftons vegetable spiralizer to make noodles out of a cucumber.
  3. Drizzle the peanut sauce on top of the noodles and garnish with chopped cilantro and additional sesame seeds. Enjoy!
