Chai Spritz Cookies

Chai anything makes me feel all warm and home-y inside. Mostly because drinking chai was a daily ritual in my home. My daily breakfast consisted of me drinking chai and dipping toasted bread with ghee into it. Yum! Ghee + chai = my childhood. I still do this from time to time just for nostalgia’s sake.

I decided to mix butter ( ghee’s cousin ) with chai and make these delicious chai spritz cookies.  My hubby bought me a cookie press for the holidays and I figured this is the best way to christen it. This recipe makes the most butter-y, aromatic cookies ever! It’s hard to just eat one. I downed about 10 cookies, walked away, and then came back for more. I literally couldn’t stop. They are that hard to resist! Also because I eat when I get bored and have foodie FOMO.  It’s a problem.

Chai Spritz Cookies


  • Total Time: 20 minutes
  • Yield: about 50 cookies 1x

Ingredients

Scale
  • 14 tbsp unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 1/2 tbsp strong brewed black tea
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp nutmeg
  • 1/4 tsp ground clove
  • 1/4 tsp salt


Instructions

  1. Pre heat oven to 350 F
  2. In a large bowl, cream butter and sugar together until white and fluffy
  3. Add egg, vanilla and strong brewed tea to the bowl and mix until well incorporated.
  4. In a separate bowl, sift together the flour, baking powder, spices and salt.
  5. Add flour mixture to the butter mixture a few tablespoons at a time, mixing well in between additions.
  6. Add the dough to you cookie press with your choice of disc shape and press cookies onto an ungreased baking sheet.
  7. Bake cookies for 8-10 minutes or until the sides just start turning golden brown. Cool on a rack and enjoy!
