You ever have a cooking fail? Like you messed up the simplest of dishes? I messed up one of the easiest dishes to make last week, I overcooked my brown rice when I was making egg fried rice. It just turned into mush. It tastiest pretty yummy, but it just looked terrible! I decided to salvage it by frying it, because why not? I took my inspiration from an Italian dish called arancini. Arancini is basically a rice ball that is breaded and fried. Leave it to the Italians to make such a yummy dish!
I breaded the arancini with panko to keep with the asian theme and they turned out amazing! My cooking fail turned into a major win. They are crunchy on the outside and soft and flavorful on the inside! Next time you have a cooking fail with rice, try frying them up – seriously…do it.

- Total Time: 40 minutes
- Yield: 25 arancini balls 1x
Ingredients
- 1 large egg
- 2 tsp soy sauce
- 1 tbsp oil
- 1/3 cup peas
- 2–3 scallions, sliced
- 2 cups cooked brown rice
- 2 tbsp water
- 1 tbsp all purpose flour
- 1/2 tbsp sesame seeds
- 1 cup of panko crumbs
Sriracha Mayo
- 1/2 cup mayonnaise
- 1/4 cup Sriracha (or to taste)
Instructions
- In a small bowl, beat the egg and soy sauce.
- Heat oil in a large skillet over medium heat. Add peas, scallions and beaten egg to the skillet. Cook for two minutes while scrambling the eggs.
- Add cooked rice, water and season with salt and pepper. Stir well and cook for 2-3 minutes. Add flour and sesame seeds and mix well. You should be able to take the mixture and roll it into a ball easily. If not add a few more tablespoons of flour. Remove from heat and cool for 10 minutes.
- If it’s too dry add more water a teaspoon at a time, if it’s too wet add more flour a tablespoon at a time.
- Take one tablespoon of the rice mixture and roll it into a ball. Then roll the ball in a small bowl panko crumbs until well coated.
- Heat oil to 350 F. Fry the arancini for 3-5 minutes or until golden brown. Serve with Sriracha mayo sauce.
Sriracha Mayo
- Mix mayo and sriracha together. You can adjust the amount of sriracha to your taste.
- Prep Time: 20 minutes
- Cook Time: 20 minutes
