Growing up, I was always way too lazy to wait for my butter to soften when I would make cookies. A lot of the time, I’d end up using Country Crock Spread. This would give me fluffy, soft, tender cookies that were to die for! Country Crock is currently holding a Make It Your own campaign, where they have provided a basic cookie dough recipe and you can add your favorite mix-ins to get your unique cookie!

We all know baking is a science and each ingredients plays a role in how your cookies turn out. In this case the ratio of brown sugar to white sugar is equal which will give you a soft, tender cookie. Also I had to flatten my cookies out because butter spreads have a higher melting point than regular butter, which allows the cookies to keep their shape while baking.

I also love using freshly ground cardamom when baking these cookies since it adds a lot more flavor than pre-ground powder. The flavors are out of this world! I love having these with a cup of masala chai in the morning. (Yes, sometimes I eat cookies for breakfast, don’t judge me!)

I didn’t have enough sprinkles to do all the cookies so I mixed them all up! To spruce the cookies up I pressed them into a concoction of Christmas sprinkles that I made before baking them.

This recipe is also a one bowl recipe and doesn’t even need a stand-mixer since the butter is so soft! Just used a spatula or a hand beater if you have one!

Cardamom and Almond Cookies

Ingredients

Scale
  • 1 cup Country Crock® Spread
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 1/2 tsp freshly ground cardamom
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1 cup white chocolate chips
  • 1 cup almond slivers
  • 1 cup sprinkles


Instructions

  1. Pre-heat oven to 375 F.
  2. In a large bowl, add Country Crock Spread, brown sugar and granulated sugar. Mix until light and fluffy (~3 minutes). Add egg, egg yolk, vanilla extract and ground cardamom. Whisk until well incorporated.
  3. Next add in flour, baking powder, salt and baking soda and Mix until well incorporated. Mix in white chocolate chips and almond slivers. Place cookie dough in freezer for 30 minutes.
  4. Pour sprinkles into a shallow bowl. Roll on tablespoon of dough into a ball and gently flatten with your hands. Gently press one of the flat sides down into the sprinkles and place onto an un-greased cookie sheet. Repeat until done with cookie dough. (You can also freeze cookie dough for future late night baking!)
  5. Bake cookies for 10 minutes or until bottoms are golden brown. Cool on a rack and enjoy!

  3. Cardamom is a favorite. The recipe sounds delicious. I’ll have to try making them gluten-free. I have watched all the seasons of Master Chef. I need to go back and watch season 6!
