OK, so I’m really behind on this all-spiralized everythang trend. But it’s never too late to hop on right? Right?…Well I hope so, because I made these delicious sweet potato noodles with a creamy sesame dressing. It took me 10 minutes to make this quick meal! I received a Briefton’s QuickSlice Spiralizer through Tomoson’s for free in return for a review. Now let me tell you, this thing comes with a learning curve. It took a few messed up carrot noodles before I got the hang of this thing. All the videos make it look so easy, and it is once it clicks and you figure it out!
It has three noodle settings so you can make noodles with different thicknesses. I spiralized the orange sweet potato with the smallest setting and the purple sweet potato with the middle setting. Once I figured out how to use it, it was super easy and it’s dishwasher safe, so cleaning is a cinch! My next plan is to spiralize a potato and make curly fries!
I smothered the sweet potato noodles with a quick sesame dressing and topped it with peanuts and scallions. I truly believe that if you put sesame seeds, peanuts and scallions on anything, it’ll taste good. So grab your spiralizer and give it a shot!
Sweet Potato Noodles with Sesame Dressing
- Total Time: 10 minutes
- Yield: 2-3 servings 1x
Ingredients
- 1/2 large purple sweet potatoe
- 1/2 large garnet sweet potato
- 2 tbsp tahini
- 1 tsp rice wine vinegar
- 1/2 tsp toasted sesame oil
- 1 tsp gojuchang paste or Sriracha
- 1 tsp soy sauce
- 1 tbsp roasted peanuts, chopped
- 1 tsp black sesame seeds
- 2 scallions, sliced
Instructions
- Spiralize both the sweet potatoes using your spiralizer.
- In a small bowl, add tahini, rice wine venegar, sesame oil, gojuchang/Sriracha, soy sauce and 2-3 tsp of sesame oil. Mix well. If the dressing is too thick add a little water.
- Toss the sweet potato noodles with the dressing. Top with chopped peanuts, black sesame seeds and scallion. Enjoy!
