A few weeks ago I helped cater a carbo-loading lunch for a group of people running a 2 day relay race. I decided to make energy bites for dessert instead of creating something sugar rich. I wanted to keep it healthy so the runners wouldn’t feel bogged down. I ended up making 4-6 flavors, but the chocolate chip peanut butter energy bites were by far the favorite. I found the recipe off Foodgawker and added chia seeds. They tasted like healthy versions of Reese’s peanut butter cups with oatmeal….sooo good!
Cook time: 35 minutes Makes: 2.5 dozen energy balls
1 cup of rolled oats
2/3 cup of shredded unsweetened coconut
1/2 cup of all natural peanut butter
1/2 cup of ground flax seeds
2 tablespoons of chia seeds
1/2 cup of mini chocolate chips
1/3 cup of honey
1 tsp of vanilla extract
1. Mix all of the ingredients in a large bowl.
2. Put the mixture into the fridge for 30 minutes
3. Roll the mixture into little 1 inch balls and place on a parchment covered baking sheet. Keep refrigerated until ready to eat.
TIP: Spray some Pam into the measuring cups before measuring the peanut butter and honey- it will keep it from becoming a sticky mess.
