I love baking with Elara and this one bowl Parle G Cookie Bottom Brownie recipe is super easy to make with her. To be honest I love how excited she gets when we bake together. She basically says what I’m thinking out loud. “Oh mannnn”, “Oooo CHOCOLATE”, “Can I lick the smashula?” were some her best quotes from my Instagram story. The brownies are super fudgy and the cookies help them hold together! If you don’t have Parle G cookies on hand, feel free to use graham crackers!

These Parle G Cookie Bottom Brownies are super fudgy because I don’t incorporate too much air into the batter. The more air you whip into it, the cakeier the brownie gets. I like my brownies chewy on the edges and fudgy in the middle! I also use salted butter in my recipe. The salt in the butter really helps the chocolate flavor stand out and helps make sure the brownies don’t taste like pure sugar bombs.

Parle G Cookie Bottom Brownies


Description

Soft fudgy one bowl brownie recipe with a Parle-G cookie bottom base.


Ingredients

Units Scale
  • 20 Parle G cookies or 5 graham crackers
  • 1/2 cup salted butter, melted
  • 1 cup granulated sugar
  • 3 eggs (or 3/4 cup applesauce)
  • 1 tsp vanilla
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 cup milk chocolate chips


Instructions

  1. Pre-heat oven to 350 F. Grease an 8×8 square pan with butter and line the bottom with Parle G cookies. Set aside.
  2. In a large bowl, whisk together melted butter and sugar until well incorporated. Add 3 eggs one at a time, mixing well in between each addition. Stir in vanilla.
  3. In a separate bowl, whisk together all-purpose flour, cocoa powder, and baking powder. Add the dry ingredients to the wet ingredients and mix until you have a smooth batter.
  4. Pour the batter onto the cookie-lined greased baking pan. Gently spread the brownie batter out into an even layer. Bake for 20 to 25 minutes. Immediately after taking the brownies out of the oven, top with milk chocolate chips. Cool completely and enjoy!
