A few months ago Rhut and I were invited to a Father’s Day farm party at Tomales Farmstead Creamery where we ate our fill in with freshly baked bagels, cream cheese, and cultured butter. Rhut was in HEAVEN! I’ve never seen this man eat so much! The farm was adorable with baby goats roaming around and tons of activities for Elara to stay busy with she mostly ended up stuffing her face with berries and bagels as well.
As the day wound down, the owners brought out a Turkish dish called çılbır, which is yogurt topped with a poached egg drizzled with melted butter and paprika and Aleppo peppers. Rhut went insane. I’ve never seen him so excited about a dish, so I HAD to make it at home!
I added an Indian twist to the dish by tempering the yogurt with garlic sesame tadka. Tadka is basically oil that has been heated with spices and then poured into either a soup (like dal) or curries to add more flavor to the dish, similar to topping a soup with a herb oil. I tempered my oil with mustard seeds, sesame seeds, garlic, and some spices. Super easy and simple!
Also, don’t be like me and wait to take a picture of the tempered oil and burn your garlic. As soon as the garlic turns light brown, pour it onto the yogurt!
We used Dosa Chips to dip in, but feel free to use paratha, bagels, pita chips, or whatever your carb of choice is! It’s garlic-y tart and slightly spicy – and delicious!

- Bring a saucepan of water to a boil.
- While the water is heating, add yogurt to a small bowl. Then in a small saucepan, add oil and heat over medium heat. Add mustard seeds. Once the mustard seeds start to sputter and pop, add sesame seeds and turn the heat down to low. Saute for 30 seconds. Add garlic and mix well. Cook until garlic starts to turn a toasty brown. Add red chili powder and turmeric and quickly mix. Pour the hot oil over the yogurt.
- Once the water is boiling, turn the heat down to low. Crack an egg into a small bowl. Lower the bowl into the hot water and gently tip the egg out of the bowl. Use a spoon to swirl the water in a circle. Cook for 2 minutes. Then use a slotted spoon to scoop the egg out of the water and gently place the egg on top of the yogurt. Season with salt and pepper. Enjoy with your bread of choice!

Notes
You can use Greek Yogurt or regular yogurt, only difference will be the consistency of the final dish. Greek yogurt will be thicker while the regular yogurt will be a bit more runny.
