Palm sugar aka Jaggery aka Gur is an unrefined sugar used in India and many other southeast Asian countries. It can be made from a various variety of palm tree and is a renewable source of sugar! Palm sugar syrup is used as a sweetener in Malaysia and I was inspired to make a warm milky drink with it! You can make a double batch of the syrup and save it for any future drinks as well!
I think what brings me the most joy from this drink is all that foamy milk! I use a spiral whisk to froth my milk but if you have a milk frother, you can use that instead. You can use espresso, coffee or strongly brewed chai depending on your caffeine needs!

Description
A warm milky latte sweetened with a palm sugar/jaggery syrup.
Ingredients
PALM SUGAR/JAGGERY SYRUP
- 1/4 cup water
- 1/4 cup palm sugar/ jaggery
LATTE
- 1 cup milk
- 1/4 cup of strong brewed tea or coffee OR 1 shot of espresso
Instructions
Palm Sugar/ Jaggery Syrup
- Add water and palm sugar/jaggery into a small pan and stir until all the sugar has dissolved. Bring to a boil and simmer for 3 minutes. Pour into a cup with a spout and set aside.
Latte
- Add milk to a saucepan over medium-low heat. Use a spiral whisk (or frother) to whisk the milk using a side to side motion to froth it up. Keep whisking un the milk starts to steam.
- Use a spoon to skim off the foam and place it into a small container.
- Pour palm sugar/jaggery syrup (to your taste) into the bottom of 2 cups (about 1 tbsp each). Add your tea, coffee or espresso. Pour the steamed milk into each cup and top off with dollops of the foam you skimmed off earlier.
